Zaks, the Norfolk-based diner restaurant, has secured a site in Thetford near Norwich on to open its fourth restaurant, on an ex-pub site.

The Bridge in Castle Street will re-open as part of the American diner group subject to planning approval to renovate the building following a collapsed roof, the Eastern Daily Press reports.

The restaurant, which is due to open by Easter, will be the first franchised outlet to open since parent company Blue Sky Leisure chose to franchise the concept in June last year.

The brand, which has been trading in the Norwich area since 1976, currently has three restaurants: Zaks Waterside Grill and Bar, Zaks Mousehold Diner and Zaks Poringland Diner.

Chris Carr chief operating officer said: “We are really excited about bringing Zaks to Thetford. This is the first new Zaks for 10 years and we are certain Thetford is the perfect place to open.

“We will definitely draw from our existing restaurants look and feel, but will be looking to give “Zaks Thetford Diner” its own special identity and unique features,” he said.

Last year Carr told M&C Report the company is “looking at expanding and wanted to replicate the well-loved feeling, we did not want a big chain mentality so we want sites run by people who put their heart and soul into it.”
