Gordon Ramsay Holdings (GRH) is to resurrect Petrus next month. Petrus will relaunch in London's Knightsbridge on the 29 March under the direction of head chef Sean Burbridge, with support provided by GRH executive chef Mark Askew. Burbridge previously headed GRH's Gordon Ramsay at the Trianon Palace in Versailles, Paris. Restaurant director will be Jean-Philippe Susilovic, who worked at the previous version of the restaurant. Petrus will be located one road over from its original location in the Berkeley hotel on Wilton Place, which is now operated as Marcus Wareing at the Berkeley. Wareing won the original Petrus Michelin recognition before falling out with former mentor Gordon Ramsay in 2008. Wareing subsequently left GRH, retaining his restaurant deal at the Berkeley but surrendering the Petrus name after legal action.
