Chris Bulaitis, the creator of Bass brands such as It's a Scream and Loaf, has set up his own company, Ever So Sensible Bars.
Bulaitis is spending £750,000 on a three-storey late-night bar and restaurant called Dogma which will open in October in the Lace Market, Nottingham.
Bulaitis hopes to open several more after the opening of the first outlet in the former Jallans bar.
