Ed’s Easy Diner, the Andrew Guy-led diner group, is introducing a BBQ & Grill format to its two Scottish sites due to open this autumn marking the group’s debut north of the border.

The first will open at the Fort Kinnaird Shopping Centre in Edinburgh, followed by a second opening in St Enoch’s Shopping Centre, Glasgow in November, marking the company’s first move into the retail and leisure park sector.

Andrew Guy, CEO of Ed’s Easy Diner said: “Fort Kinnaird is the perfect location for our diner and we are so proud to be launching our first ever site in Scotland. We have plans to open at least two more Ed’s Easy Diner BBQ & Grills during 2015 in retail and leisure parks, as well as open up to 15 new Diners in shopping centres and busy high streets across the UK.”

The Bar & Grill sites will extend on the classic Ed’s menu to include appetisers such as wings, salads and nachos, as well as a grill section of BBQ ribs, steaks and a mac & cheese alongside the burger menu. The menu, which was successfully trialed at Basingstoke will include beers, ciders and wines.

Ed’s has chosen the retail and leisure park locations to capitalise on the all-day dining and increased footfall found at these destinations.

The group’s policy for hiring staff based on attitude over experience gained them recognition by UK employment charity Springboard, which it said it will continue to work with to hire local staff in Edinburgh and Glasgow to offer long-term employment and careers.
