Tom Simmons Tower Bridge will remain trading after being sold in a pre-pack, administrators have confirmed.

Durkan Cahill said following successful negotiations with the landlord, which led to an assignment of the company’s lease, the restaurant continues to trade under new ownership

The jobs of all staff at the restaurant have been preserved as a result of the sale

The sale of the business, involving the transfer of employee contracts and the assignment of the lease, has also resulted in significantly reduced liabilities in the administration, and it is estimated that this will result in a more favourable outcome for the company’s creditors, Durkan Cahill said.

Harry Lewis, managing director of landlord Berkeley Homes South East London, added: “Following a business restructure, Tom Simmons will continue to trade at One Tower Bridge.

”We are confident that the quality of his food will guarantee continued success along with the other restaurants in the development. We are committed to supporting our new and established brands at One Tower Bridge, as it develops into an exciting new destination.”

Recent openings at One Tower Bridge include Rosa’s Thai Café, Gunpowder and Custard, the Gunpowder team’s wine bar and bakery which opens tomorrow night, as well as Vapiano, opening in October.
