Sukhothai, the Leeds-based Thai restaurant group is rolling out its street food concept Zaap with a second site due to open in November in Nottingham, M&C has learnt.

The restaurant is opening at Bromley Place six months after the first Zaap opened in Leeds serving a menu of traditional Thai street food in a space designed to replicate a busy marketplace in Bangkok.

Simon Carter, who heads up Sukhothai told M&C the brand was conceived with roll-out potential.

“We have hopefully got another site planned for the early part of next year and depending on how things go we will potentially do another two or three in that financial year.”

He said the geographic spread of sites will initially be organic but dependent on suitable sites becoming available.

Parent company Sukhothai opened 14 years ago in Leeds and has since grown to three restaurants under the formal dining brand.
