Nuno Mendes, executive chef at the Chiltern Firehouse, is planning to launch the Long Table – “an incubator for new food concepts” - at the White Factory Collar development in London’s Old Street.

The Long Table is designed to bring a number of small scale and emerging food and beverage outlets under a single umbrella organisation. It will comprise of over 15 trading spaces with leases from three to six months.

A pitch for the concept seen by MCA states: “The Long Table will source the brightest culinary talent and provide interns with a space to incubate their concepts in a ground breaking dining environment. These operators are provided with the tools, support staff and operational structure to trade without up front costs.

“We will cultivate new inroads into hospitality in the culinary heartland of the East End of London embracing and celebrating this creative place through food, art, technology and culture tucked away under Old Street Yard. The Long Table will provide a network of specialist services and best practice throughout their time in the business to act as accelerators assisting in developing their concepts ready for market.

“Furthermore, centralised buying will afford each trader best price on their food purchases to give interns every chance to commercially succeed on their journey.”

The space will also include show kitchens, a tasting room, and casual seating and break out area.

Later this year, Barworks, the London-based pub and bar group led by Marc Francis-Baum, is to partner with Mendes to launch Mare Street Market, a 10,000sq ft bar, restaurant, coffee roaster and patisserie in Hackney.

White Collar Factory offers 237,000sq ft of new office space and includes the Old Street Yard, which will contain three restaurants, totalling 10,000sq ft.

As previously revealed by MCA, Foley’s, the modern world food-inspired concept led by ex-Palomar sous chef Mitz Vora, is also set to take space at the scheme.

Foley’s is backed by the Goodlife Projects team, including Rum Kitchen co-founder Jonny Boud.

Davis Coffer Lyons and Shelley Sandzer are acting on the restaurant mix for the scheme.
