Ray McClymont, former chief operating officer at the Food and Drink group, has taken up the role of interim head of operations at Paramount Restaurants.

McClymont, who is currently a director of Chalice Bars, operators of the Lowlander Grand Café in London’s Drury Lane, joins Paramount on an interim basis, after the departure of two of the group’s operational team earlier this year.

He was also previously operations director at Laurel Pub Company.

James Picton, former head of operations at the operator of the Chez Gerard, Brasserie Gerard and Livebait brands, joined La Tasca as operations director in April.

In the same month Nigel Pinegar, former director of operations at Paramount, joined Mitchells & Butlers (M&B) as an operations development manager for its 135-strong Ember Inns estate.

At the start of the year, Paramount appointed Colin Clarke as its new operations manager for Brasserie Gerard.

Clarke joined the company, which currently operates just over 40 restaurants, after previously being business development manager for new concepts at Punch Taverns.
