Maki, a new sushi concept, which features a ‘design your own’ element, is planning to expand across London, after securing its first site in Spitalfields, M&C Report understands.

The concept, which will launch on the former Go Pizza site in Brushfield Street this August, is the brainchild of brothers Daniel and Antony Woodcock, sons of Louis Woodcock, the founder and chairman of hotel management company BDL, who passed away in 2012.

The brothers, who previously operated the ‘Maki Machine’ street food truck in Spitalfields Market, have retained MKR Property to seek further sites in the capital for the fledgling concept.

The concept allows diners to decide exactly what they want in their sushi roll before seeing it made in front of them in a matter of seconds.

The company said: “Diners can be as creative as they want and are encouraged to come up with their own flavour combinations. For those in a rush or just unsure what to order there are a variety of delicious freshly made house rolls available such as the best selling Maki roll which is a combination of salmon sashimi, crab salad, crispy salmon skin, avocado and Maki Mayo.”

Maki agreed a new lease on the 420sq ft Brushfield Street site.

Marc Rogers, managing director of MKR Property, said: “Maki fought off stiff competition to secure this site in what is a hugely desirable area and I’m confident that their fantastic sushi will be a huge success.”
