Macellaio RC founder Roberto Costa has teamed up with Italian chef Simona Ranieri for a new gluten, sugar and dairy free restaurant concept, MCA has learnt.

Ardiciocca, meaning artichoke, has secured its first site at the former Hanger Steak site, on 461 - 465 North End Road, Fulham Broadway, for an April opening, with more expected in 2018. 

The concept will serve “guilt free” Mediterranean style food, with coeliac chef Ranieri’s menu to showcase her “naturally gluten free” cooking philosophy, with 80% of dishes to be vegetarian.

Ardiciocca will make use of gluten free products from around the world, such as the teff grain from Ethiopia and amaranth and quinoa from Peru, as well as hemp, millet, buckwheat and plankton, with no attempts to substitute flour cheese or sugar.

Ranieri already operators a delivery-only kitchen in London, Casa Ranieri, which delivers to a 4km radius from Battersea Park.

Costa operators four Macellaio RC sites in London, and is also working on an additional concept, Osteria No 1, with each site to have a different type of regional cuisines using D.O.P. products, with the first to showcase Liguria.

Costa has also secured a first international site for Macellaio RC, at Via Fiori Chiari in the Brera district of Milan.
