The former operations director of Pizza Hut, Paul Van Staden, is bringing build-your-own pizza concept, Doughocracy, to the UK, MCA has learnt.

The brand is set to open its first UK outlet in the food court of Liverpool’s St John’s Shopping Centre this month. MCA understands there are also plans to open sites in Manchester, Glasgow, Ilford and Watford.

The brand was launched in the US last year by Chicago Franchise Systems – the group behind Al’s Italian Beef and Nancy’s Pizza. It currently has stores in Geneva, Illinois and University City, Missouri.

The concept offers 10 pizza varieties as well as allowing to build their own.

Van Staden is currently chief executive of Anzaa Ltd, which specialises in quick service restaurant franchises.

He spent 10 years as managing director of Guildford Pubs, and was previously chief operating director for Hard Rock Café Middle East.
