New egg-focused restaurant concept Egg’cellent is to open in Covent Garden in June 2018, after founder Irina Shabrina secured a site for her first solo foray into the London restaurant scene.

Shabrina secured the 2,3000 sq ft two-storey site, on the Strand, through Restaurant Property, who were tasked with acquiring a high footfall central London property to fit the niche all-day dining concept.

The menu at Egg’cellent, which is due to open in June 2018, will revolve around dishes made from fresh organic eggs, and will take inspiration from across the globe, such as America’s fried omlette bagel with cheese, bacon and tomatoes, to Bulgaria’s delicate eggplant stuffed with pieces of beef with basil sauce.

“Knowing of Irina’s success in bringing trendy new projects to life in both London and Moscow, it was an absolute honour to help her secure a property for her own, first solo concept,” said Restaurant Property surveyor, Gabriella Sether.

Shabrina said: “I am delighted with the prominent Covent Garden location and I can’t wait to start welcoming customers through the doors.”

The site, a former Garfunkles restaurant located on the Strand, has been leased from Capital & Counties Properties PLC (Capco). It is set to complete in March 2018.
