Drake & Morgan’s latest site is set to open on 21 September and will be called simply Drake & Morgan at King’s Cross, M&C understands.
Operations director Dylan Murray told M&C that the company felt “the time is right to put the name above the door”.
Murray said: “We are only four weeks into the construction but so far there haven’t been any hold-ups so we are hoping we will be on track for 21 September.
“It’s going to be a slightly elevated proposition. We are working on a few concepts at the moment but it’s still a very early stage.”
Murray said the company had recently refreshed its drink offer, including a rationalisation of how many wines are sold by glass.
He said: “Previously we were in a pretty unsustainable situation where we had almost every wine also available by the glass. It didn’t make sense either in terms of margins or the ability to ensure the quality of the wine. We now have probably 12 white and 10 red by the glass, which is still a pretty wide range.”
