High-profile chef Mark Baumann has placed his Baumann’s Brasserie in Essex on the market as he looks to concentrate on launching a new chain of steak & lobster restaurants called Bourgee.
The new venture is set to open its first site at the former Tiffin’s restaurant on Southend’s Eastern Esplanade next month, while a second site limned up for Billericay.
The project has been two years in development and Baumann has previously talked about growing the brand to up to 15 sites.
A spokesperson for Baumann told the Southend Echo: ““While the brasserie continues to enjoy phenomenal success and critical acclaim, Mark feels it is hugely important to evolve. He has enjoyed a fantastic 28 years at the brasserie, however, given the scale of the Bourgee concept, he has taken the very difficult decision to focus purely on the new restaurant group and move on from Baumann’s Brasserie.”
Baumann is launching Bourgee, which will specialise in fine dining, steak and lobster, with business partner James Welling.
