The Avocado Show is set to open at least two more sites in London in the new year.

The news comes after the specialist casual dining concept’s first UK restaurant opened on London’s Princes Street in October.

Matteo Frigeri, business director at Seeds Consulting, who is working with the brand on franchising, told MCA: “We have a franchise operator in Mayfair, and his plan is to open a minimum two more locations in London in the next few months.

“We’re also looking for parties to operate the brand outside of London in other parts of the UK.”

Friends Ron Simpson and Julien Zaal founded the brand in March 2017, opening their first site in Amsterdam with a mission of celebrating the avocado and styling each dish like an Instagrammable work of art.

The concept has since expanded to Brussels and Madrid.

Seven restaurants operate in the Belgium, the Netherlands, and Luxembourg region, while franchisees run outlets in Madrid and the 43-cover site in London.

Since its launch a few months ago, the Princes Street restaurant has been “sold out every weekend” and is also fully occupied on Thursdays and Fridays, Frigeri, said.

He added the brand’s online reputation and digitally-connected customers had helped to drive strong trade at the restaurant, which serves classic plates with an avocado twist including the Avocado Bun Burger and Salamango Poke Bowl.

“We opened with a really good level of sales,” Frigeri said. “We benefit from the fact that we are just off Regent Street, which is quite busy with shopping at the moment, so a lot of people come to us like a destination although we are quite central as well which is good.”

Separately, the business is also gearing up to open a QSR format in Amsterdam’s Schipol Airport in 2022. It has also signed franchise partners in France and Germany.
