Barracuda, the managed pub operator, which is close to finalising a restructuring, is launching a new autumn winter menu under its Smith & Jones brand that it says taps into latest food trends such as BBQ burgers, burritos and grilled chicken. The menu, which goes live in 196 pubs on 25 September, has 25 new dishes including a pulled BBQ Beef Burger which taps into the trend of slow cooked, pulled meats and bold BBQ flavours which have been trail blazed by pop-up eateries. The bar snacks section, which was introduced to the menu last year with positive feedback from customers, has also been extended from eight to eleven items in addition to being enhanced with new items. They include a Dunkley’s mini shepherd’s pie with mushy peas & HP sauce; a trio of mini burgers – one of which is the pulled BBQ beef burger, and sticky chicken skewers grilled with a ginger beer glaze. The ‘Breads’ section of the menu sees a spicy chicken burrito and a vegetarian Mexican burrito introduced, reflecting the need for bolder, fresher flavours driven by the street-food style trend. A new ‘The Big Eat’ section features on the menu helping to satisfy the stomachs of those with a larger appetite and includes a Monster Pie, which weighs in at one and a half pounds. The pie is filled with British beef & potatoes served with mash, garden peas and a jug of gravy. Kate Eastwood, head of food at Barracuda, said: “There are some exciting food trends and innovation coming out of start up restaurants and food stalls and its great opportunity for pubs to embrace these trends and offer our customers similar flavours. “The autumn winter Smith & Jones menu is a great mix of current food trends combined with pub favourites and dishes that are perfect for sharing with large groups or snacking whilst enjoying a drink or two. Our customers visit our pubs across a range of occasions so it’s vital to have dishes that cater for those differing needs.”
