Chop'd, the salad bar concept, has raised £850,000 to open up to six new sites. The group is looking in the City of London, with current targets including Liverpool Street area, Moorgate and Ludgate Hill. Chop'd currently operates one site, in Leadenhall Market. Annual sales are approaching £600,000, with the majority of trade occurring in the two-hour lunchtime period. Chop'd said it was keen to explore three different size formats, from 600sq ft to 2000sq ft, all requiring only A1 usage. The funding was split between £475,000 provided by private equity and £375,000 by bank loans. Key investors include Susan Arndt, the group's non-executive chairman, chief operating officer of Molton Brown, previously with Starbucks UK, Erem Kassim-Lakha, non-executive director at Chop'd and previously Strategy Director of Spirit Grou), George McGann (ex-Morgan Grenfell) and Archie Norman, former UK Retailer of the Year, who acts as a consultant to Chop'd.
