Epicurian owner Pat McDonald is planning a chain of in-pub Epic Bar and Brasseries serving "eclectic, value-for-money" food.

McDonald, who has three AA rosettes at his restaurant in Pershore, Worcestershire, wants to open 12 Epics, catering for 75 to 100 people each, within five years.

He expects the first to open within the next nine months.

The aim is to make £1m profit over five years, sell the group and then start again.

Financing has yet to be finalised although he has £3m of institutional money and promises of £1.5m equity investment so far.

Average opening spend per outlet is estimated at £150,000.

Starters will cost £4 to £5 and main dishes will cost £8 to £11.

Dishes will include pot au feu, antipasti and Moroccan lamb stew and the menu will feature a lot of stove-to-table food in pots, on boards and in tagines.

McDonald said the project would not be connected to any brewery or hotel company.

Talks had been held with Enterprise Inns. which wanted him to take over some of its restaurants on leasehold. But he has so far preferred to go down the equity investment route.
