David Belhassen, head of the UK arm of Paul, the upmarket patisserie operator, has revealed ambitious plans to open between 50 and 60 sites in London.

Belhassen, who launched the format in the UK in 2000, told The Grocer, a sister publication of M&C Report, he also thought the brand could be rolled out across the UK.

The chain is looking at potentially branching out to Cambridge, Edinburgh, Guildford, Leeds and Manchester.

Belhassen said: “I could operate 50 to 60 outlets in London, then I will look elsewhere.”

Turnover at Paul, which currently operates 24 sites, is set to top £25m in 2010, up from £20m last year.
