Thunderbird Fried Chicken has opened a delivery kitchen in Streatham, joining its existing Food Stars units in Battersea and Shoreditch.

The Trispan-backed wings and fried chicken concept opened its first suburban dark kitchen in Croydon earlier this year but told MCA that it has switched this unit for the Streatham location.

Paul Gilchrist, chief executive, Thunderbird, said: “It’s a busy time for us as we last week opened our first franchise with Parkdean Resorts at Camber Sands, and we’re very excited to be expanding our London delivery radius with this new kitchen.”

Speaking on MCA’s The Conversation in April this year, Gilchrist said the first three months of 2021 had been the best it’s been for delivery and dark kitchens due to the impact of the pandemic.

Gilchrist said the business had been offering delivery and takeaway throughout, and, certainly since January, had been seeing week-on-week growth in sales. It also opened a new “next generation” site in Earls Court at the beginning of April.

“We’ve been able to develop the menu through lockdown and go back and look at every aspect of the business. In some ways the pandemic helped us – it gave us the opportunity to go back and re-evaluate and gave us the time to develop certain areas of the business,” he explained
