Patisserie Valerie, the Patisserie Holdings-owned brand, has opened the third site under its brasserie format on the site of the former Café Rouge in Glasgow’s Royal Exchange Square and its second roadside unit, M&C Report has learnt.

The Royal Exchange Square site is the c105-strong brand’s second Brasserie in the city and third in Scotland, alongside one in Aberdeen’s Union Square.

The Paul May-led chain has recently opened a site at Baldock Services just off the A1 and is understood to have further openings in lined up for Clapham, Hammersmith, York Coppergate and Swindon.

It recently opened in Romford and Tunbridge Wells as part of plans to open up to 20 units in its current financial year.

The Royal Exchange Square site is open till late and features a full menu (including a traditional Scottish breakfast) and the brand’s new afternoon tea offer

On expansion plans for the Brasserie format, chairman Luke Johnson told M&C Report last year: “The really overheated element is A3, that’s where the big premiums are and what I would consider to be silly rents for new sites. We don’t see too much of that. That might possibly curtail the opening of more sites under the Brasserie format. However, we tend to open them on an opportunistic basis, where we come across a special situation in terms of the site.”
