Gail’s Bakery and Triple Two Coffee are among the operators in the coffee shop/café and bakery & sandwich market that are growing at the fastest rate, according to new data from Lumina Intelligence.

Its latest ODI Monthly Analysis for May 2021 forecasts growth of 13.3% for Triple Two Coffee, with two further sites expected to be added to their estate by the end of the year, as it expands out of its south of England and the Midlands heartland through a franchise operation, taking its total up to 17.

Meanwhile Esquires is expected to grow by 12.2% to 55 sites, and Black Sheep Coffee by 10.8% to 41 sites.

On the sandwich & bakery operator side, Gail’s is expected to add a further 11 sites to its estate this year, taking it to 75 (+17.2%), as it continues with its aggressive expansion plans, with its latest shop opening in Reigate, Surrey, yesterday.

While increasing its footprint by a smaller percentage (+4.8%), Greggs is planning to add a further 100 sites to its estate in 2021, taking its numbers to 2,178.

The report suggested that with their greater focus on to-go trade, coffee shop/café and sandwich & bakery operators have been less exposed to some of the challenges faced by other hospitality businesses.

Operators have also diversified during the pandemic, with a greater focus on digital solutions for customers, including loyalty and promotion schemes, as well as retail products, it said. While changing working patterns have led to greater opportunities in out of town locations as well as online.
