Wahaca has launched a new menu inspired by results from it Shoreditch test kitchen.
The new menu sees a wider variety of vegetarian dishes added. Feedback from the Test Kitchen also prompted the rollout of the DIY Taco Board, with bavette steak, grilled fundido cheese and fresh meco salsas. The crispy Duck Croquetas, which were a recent special, have also been made permanent.
The new menu also features Mexican Bowls packed full of fresh ingredients like black beans, green rice, slaw and salsas, plus toppings like the Wahaca classic slow-cooked pork pibil.
Co-founder Thomasina Miers said: “Our food is in a new phase of creativity as we see how the nation is whole-heartedly embracing Mexican food. Where we were once cautious about pushing the boundaries too much we are now excited about how much we can offer in terms of flavourful, healthy, vibrant food. We feel this is only the beginning.”
