Turtle Bay, the Caribbean restaurant concept developed by one of the founders of Las Iguanas, is lining up further openings across the Midlands and the South, with a fifth site in Leicester currently close to completion. The company, which is led by Ajith Jaya-Wickrema, will open its fourth site in Bristol today and is thought to have further sites across the South of England under consideration. The group, which opened its third site in October in Nottingham, will open a unit in Bristol’s Broad Quay development. The chain opened its second site last July in the Guildhall in Southampton. The first Turtle Bay opened in the final quarter of 2010 in Mortimer Square, the Hub, Milton Keynes. Jaya-Wickrema launched Las Iguanas together with Eren Ali, in Bristol in 1991.
