Seafood restaurant group Rockfish, founded by Mitch Tonks, has submitted a planning application to Poole Council, to open a restaurant within the Purbeck Pottery Building.
The design and access statement submitted says the building would be fully refurbished as part of a £1.75m investment, with proposals made for a large open-plan dining area with a small bar.
“We believe that Poole quay is a perfect location for us and we would fit well into the area and community, providing a high quality destination restaurant for families to enjoy the local seafood,” the statement adds.
Rockfish has six restaurants, with its latest opening on the Exeter Quays. Earlier this year, Tonks said he had been working with chairman Will Beckett and board members, including henry Dimbleby and former La Tasca chairman John Barnes to prepare the company for expansion.
The group is looking to open three sites over the next 18 months, and is targeting sites along the coast in the central southern region, up to South Wales.
