Will Ricker, founder of Ricker Restaurants, which owns and operates a number of successful restaurants in London and New York, is looking to launch a new concept based on a traditional US smokehouse, in the UK, M&C Report understands.
The Stoke House will feature one large contemporary eating hall bordered by “an energetic bar” and a ‘smoker’ self-service food counter.
Ricker is seeking sites of 3,000-5,000sq ft in central London and neighbourhood locations for the concept and is understood to be in talks on a unit at the Nova development in Victoria.
The concept, which will also offer take out, will specialise in dry rubbed cuts, sourced from the local farmers.
The offer will include brisket beef ribs, pulled pork, pork belly, lamb belly, spare ribs, jerk baby back ribs and quarter or half chicken, plus classic sides such as mac & cheese, smoked pit beans and collard greens - with smoked pork shoulder.
Ricker recently teamed up with author and filmmaker Joe Cross, to launch a new juice bar concept in Soho called The Juice Well. It is though he is also looking to add a unit under this brand into the Nova development.
He also owns and operates restaurant such as La Bodega Negra, E&O and Eight Over Eight.
