Prezzo, the Jonathan Kaye-led group, is set to trial a new casual dining concept called the Cleaver at its Cobham site, M&C Report understands.

The group is currently converting the former Brasserie Gerard site in the town to the new meat-led format, which will serve the “freshest food in a theatre style kitchen, with the entire cooking process taking place in front of the guests”.

It is thought that the format is being developed with an eye on becoming a third rollout brand for the group, which operates its eponymous brand and Mexican brand Chimichanga.

Prezzo, which declined to comment on the Cobham development, anticipates opening 25 new restaurants by the end of this year and is currently on site in eight locations.

Last year the group, which earlier this week reported a 16% rise in full-year EBITDA, operated a new format called Pizza Porto on the site of the former Brasserie Gerard in Manchester for a short period.

The site was subsequently acquired by JW Lees for a second opening under its café bar format Duttons, which is set to open later this spring.
