Paul Miller has stepped down as culinary director at Busaba Eathai, the casual-dining Thai chain, to join Carluccio’s as its food director, MCA understands.
Miller joined the Jason Myers-led Busaba at the end of 2014, after over a year working as a category manager at WholeFoods Market UK. Previous to that he spent over two years as a category product developer at Sainsburys.
He joins Carluccio’s as it looks at multiple trading formats for future growth including new sites for its Via ‘grab and go’ concept – with a focus on travel hubs.
Chief executive Neil Wickers recently told MCA that elements of the company’s first ‘new generation’ store would roll out across the existing estate ‘quite quickly’, but that the success of the trial site in Spitalfields would dictate how many aspects pf the new format will go into new openings.
He also said the company’s first hotel site – at the London Marriott Hotel Regent’s Park – gave it another avenue for growth.
Carluccio’s opened the first of its new-look stores in Spitalfields three weeks ago, with a focus on integrating the deli and retail offer more closely with the restaurant, including dividing the menu into dishes ‘from the deli’ and ‘from the kitchen’.
It also sees the company introduce its first pizza offer – with four varieties on offer, all topped with ingredients from the deli.
