Las Iguanas, the Casual Dining Group (CDG) brand, has said it is restructuring its senior management team, following the news that chief financial officer Kieron Pollock is stepping down.

Pollock, who has been with the company for eight years, also had responsibility for the marketing, training and menu development functions.

The company said that given the current size of the business and an expansion programme that will see it launch c20 new venues per year for the next two years, it had elected to search for both a chief operating officer and finance director. Both positions will report into managing director Mos Shamel.

Pollock will leave the group in June and will conduct a handover with his successor, the group said.

Shamel said: “Kieron has played an integral part in the success and growth of Las Iguanas. He was also instrumental in the successful acquisition by Casual Dining Group (CDG) and subsequent integration. Now that this work is complete, he has decided to begin a new chapter and we wish him well.”

CDG chief executive Steve Richards added: “I would like to place on record our thanks to Kieron for his excellent service and contribution, notably the successful merging of Las Iguanas with CDG. He leaves the business is great shape.”
