Las Iguanas, the Latin American chain, has tweaked its expansion strategy to include out-of-town developments, after securing its first site on a retail park at Cheshire Oaks.

The site in the Coliseum Leisure Park will become the group’s 30th when it opens later this summer and it is thought that the group is looking at similar out-of-town locations in Bristol and Swansea.

The chain, which is led by Eren Ali, will open its latest restaurant in Plymouth’s Royal William Yard on 1 May.

Late last year, Ali told M&C Report that the chain had a strong pipeline of openings in place and had “40 street names in places” that the group “could go for tomorrow” in terms of new openings, including 25 in Greater London.

Ali said that the dearth of new development schemes across the country had hampered the group’s expansion, but that “if everyone came off, we would be in a position to open a restaurant a month in 2014 at this rate”.
