Artisan pretzel and coffee group Knot is opening a store in Boxpark in Croydon, MCA has learnt.

The group will join some 40 food and drink operators at the new development, including MeatLiquor, Chilango, Craft Beer Co and The Breakfast Club.

London-based Knot is also preparing for a delayed launch at Vauxhall station, which will see its estate grow to six.

Vincent Pierrot, former inerntaitonal project manager at Ping Pong Dim Sum, who leads Knot with his wife Irina, said: “We’re trying to put some sites in the pipeline though right now is to focus on the next two sites and then review what we can do.

“It depends how these sites are performing. We will go one step at a time, try and make money and expand as we go. After two more units and depending on where we are we can accelerate the growth.”

Vincent, who led the roll-out of the Group Flo restaruant group in France, said he would look into refinancing Knot in mid-2017 with franchising an option he will consider for the next round of expansion.

He said business picked up in June after a quiet start to 2016.

Pierrot admitted his 2014 target to open 50 stores in five years might have been over ambitious after slower than expected expansion.

“It’s taking more time then we wanted”, he added. “Though why not, you never know. We’ll see.”

So far Knot has targeted high footfall transport hubs with kiosks in London Victory, Richmond and Clapham Junction railway stations as well as a stall at Kingston­upon­Thames market.

“Transport locations have proven pretty good for us because our offering is very strong for breakfast so this is good in train stations where we make 50% of our sales before 11am”, he added.
