Just Falafel, the falafel chain, has appointed food development veteran Gerard Murphy as consultant chef to expand the UK menu including adding a range of lighter, lower calorie options.

New additions, to be introduced next month, will include fresh salads, mini-wraps and lighter sandwiches. The current menu will be reviewed and updated.

Murphy’s role will also involve developing a range of a healthy desserts and breakfasts, due to launch in October 2013.

He was previously worked in food development at Kerry Foodservice and has worked with restaurant chains including Little Chef and Harry Ramsden’s. He was also development chef at Compass Group Uk & Ireland.

It comes as Just Falafel looks to expand to 200 sites in the UK over the next five years, with three outlets in London already open and sites in Charing Cross, Croydon and Cambridge due to open over the next few months.
