Itsu, the Japanese sushi bar concept founded by Pret A Manger directors Clive Schmee and Julian Metcalfe, is looking to add five to seven new outlets a year to its estate. The company, which currently operates three restaurants and seven takeaway outlets across London, is looking to add four new sites in the capital over the next 12 months. Glenn Edwards, head of operations at Itsu, said the company would then look at opening five to seven new outlets a year. The company also hopes to expand by the same rate in the US, after agreeing a franchise deal to open its first restaurant in Manhattan, in October.
