Hawksmoor will open the doors to its second US restaurant in Chicago tomorrow (27 June).

The new location is a key step in the steak restaurant group’s international development plan of opening “world-class restaurants in world-class cities”, currently focused on North America.

It follows Hawksmoor’s debut US site, which opened in New York City’s Flatiron district in 2021, and the launch of another international site in Dublin in 2023.

The opening comes as the group remains on target to clear £100m in sales this year, alongside consistent like-for-like growth.

The Chicago location spans 16,500 sq ft and three storeys – Hawksmoor’s biggest and most ambitious yet – and can seat more than 200 diners.

It is housed on 500 LaSalle Drive in a building that was a former streetcar powerhouse in 1998, during the heyday of Chicago’s cable car system. The building also housed basketball player Michael Jordan’s eponymous restaurant in the 1990s.

The site features a main dining room that can host up to 125 diners, with a wraparound bar for additional space for those seeking a cocktail or small plate.

A second dining room on the first floor comprises space for 76 guests, plus two private dining rooms on site to host up to a further 40 guests.

As the UK’s first B Corp restaurant brand and the first steak business in the world to be certified as carbon-neutral, Hawksmoor’s US restaurants operate with the same mindset, “echoing its exceptional ethical and sustainability credentials.” The business works with like-minded farmers who rear cattle to Hawksmoor standards, and also with suppliers who provide fresh ingredients, locally sourced where possible.

Hawksmoor has partnered with Pilot Light – an inspiring food education non-profit founded in Chicago that invests in teacher leadership to create lasting change on students and the food system. Aside from an initial donation, Hawksmoor is planning fundraising and volunteering opportunities.

The group opened its first site in Spitalfields in East London in 2006, and has gone on to open a further 12 sites in London, Manchester, Liverpool, New York City, Dublin, and now Chicago

Will Beckett, co-founder and CEO of Hawksmoor, said: “One of the great joys of our working lives is opening world class restaurants in world class cities, bringing incredible steak, seafood, cocktails and wine to diners across the globe. Chicago is right up there as one of the meat capitals of the world and, like New York City, is home to some of the very best steakhouses. It has one of the greatest hospitality scenes going, where food and drink is baked into the culture of the city, and for Hawksmoor to be a part of that is incredibly exciting. It has been quite moving for Huw and me to have received such a warm welcome from Chicagoans, and so much support and messages of pride from our peers and guests in the UK and Ireland.

“Over the years we’ve learned to set our sights higher, both in terms of growth and of the integrity with which we want to build our company. We believe Hawksmoor has the capability to be one of the world’s great restaurant brands, and Chicago is an important step as we continue to develop our presence in the United States. We are just as passionate about the business now as we were when we started out 18 years ago, and we can’t wait to welcome Chicagoans to a restaurant that we hope will become a local institution.”
