Michelin-starred chef Skye Gyngell, formerly head chef at Petersham Nurseries Café, has confirmed that she will take one of the available units at Somerset House for an opening of her new restaurant Spring later this September.

Spring, which will feature a menu “guided by the changing seasons”, will sit in Somerset House’s New Wing, the first time that this space will have been open to the public for more than 150 years.

Davis Coffer Lyons (DCL) were appointed to seek operators for two new units at the Strand and River facing New Wing at the historic property, which already counts Tom Aiken’s Tom’s Kitchen, Tom’s Deli and Fernandez and Wells as tenants.

The two premises comprise of approximately 4,500sq ft of ground floor space each with further back of house space in the basement levels. Each space incorporates a “stunning period drawing room” at the ends of the wings one being close to the Strand and Covent Garden and the other with views overlooking the river and the river front terrace.

Gyngell appointed advisers last year to aid in her search for her first London restaurant.

Morningside Group appointed CWM to help find a 3,000sq ft property, with 80 covers, in the capital, with Notting Hill, Chelsea, Fulham and Holland Par preferred locations.
