Grillstock, the fledgling barbecue concept, has secured its second site in the South West, in Bath, M&C Report understands.
The concept, which is led by Ben Merrington and includes Las Iguanas co-founder Ajith Jaya-Wickrema as a backer, is believed to have secured a unit at The Vaults on Brunel Square, near Bath Spa Railway Station for an opening later this summer.
Last summer, Merrington told M&C Report that the group was looking to roll out its concept and had identified a number of target cities.
The first Grillstock Smokehouse opened at Triangle West in Bristol’s Park Street in June and brand director Merrington told M&C Report that sales at the 32-cover site, which includes a large central sharing table, so far have been “fantastic”. “It’s been packed out with queues out the door.”
“We will be looking to scale up fairly quick and move out of Bristol. There’s Cardiff, Bath, Reading, and then [we would] follow that sort of route.”
