Grillshack, the new fast-casual concept backed by Richard Caring, has secured its first site in London’s Soho, M&C Report understands.

The new venture, which will be led by Mark Askew, former executive head chef at Gordon Ramsay Holdings, and Hannah Bass, former UK operations director at Hakkasan, has acquired the Alphabet Bar unit in Beak Street.

The site is expected to open late summer and be the first of a chain.

Grillshack will be a “quality, fast casual counter service grill restaurant”.

M&C Report revealed last year that Caring had set up Grill Shack Restaurant. He currently backs Cote, Bill’s and Caprice Holdings.

He previously backed Strada before the then c55-strong chain was sold to Tragus for £140m in 2008.

Cote has grown to 40 sites and is currently coming to the end of a sale process, while Bill’s currently operates 19 units with 12 restaurants set to open under the brand this year.

Shelley Sandzer is understood to have acted on the Beak Street deal.
