The team behind Fallow restaurant in St James’s is opening a new pop-up chicken shop format in nearby St James’s Market.

FOWL will be taking over a pub previously run by the Cubitt House Group, and is being described as a ‘chicken shop like no other’.

Fallow chefs Will Murray and Jack Croft, alongside chariman James Robson, have created a ‘beak-to-feet’ menu, which will include dishes such as chicken liver parfait with black cherries and sourdough soldiers, triple crisp hot wings with sriracha mayo and chicken caesar salad with pickled lemon and anchovy.

A cocktail and wine list will also be available, alongside beers including Guinness on tap.

FOWL will be collaborating with a series of ‘celebrated food icons’ to create one-off dishes, starting with Pierre Koffmann. 

This will be followed in November by Lennie Ware, the star of food podcast Table Manners,
