Vegetarian restaurant Ethos is looking to secure its second site in central London by the end of the year after initial performance far exceeded expectations since opening in September.

Jessica Kruger, who opened the self-service restaurant last year, told M&C Report: “It has been very good: better than we hoped. In terms of figures we are doing double each day what we hoped.”

For the second Ethos the company is looking at sites in central London with a focus on the West End and the City, where Kruger hopes to open later this year.

After the success of the first Ethos at Eastcastle Street near Oxford Circus Kruger is confident there would be sufficient demand for a roll-out and is working to develop different models for the next site to make it adaptable to different size spaces and to suit the demographic depending on the location.

Ethos Foods operates on a pay-by-weight self-service model. The system gives customers complete freedom to pick and mix their meals from a choice of more than 20 different hot and cold savoury and sweet dishes.

Michelin-starred restaurateur David Moore (Pied-à-Terre, L’Autre Pied), is involved in Ethos as a consultant.
