Ed’s Easy Diner, the fast-growing American-style casual dining chain, has opened its 21st restaurant in Watford and confirmed that its next two openings will be in Derby and York.

The 2,540 sq ft, 113-cover Watford unit opened this week at the rebranded intu shopping centre, formerly known as The Harlequin. The brand is set to open in Westfield Derby on 19 November and McArthurGlen Designer Outlet in York on 10 December.

Ed’s is targeting a further 15 openings by the end of 2014.

Andrew Guy, chief executive of Ed’s Easy Diner, said: “As we come to the close of a very successful year for Ed’s, we’ve found that some of the openings have performed well above expectations, such as Metrocentre in Newcastle, Meadowhall in Sheffield and now Watford. We now head to high footfall sites Westfield Derby and McArthurGlen in York in the coming weeks and hope to see trading at similar levels going into 2014.”

M&C reported last month that Ed’s was believed to be looking to open two units in York at the city’s Designer Outlet and the Monk Cross development, with other possible openings lined up in Derby; Lord Street, Liverpool; Victoria Place Shopping Centre; Salford Lowry Outlet Mall; Crawley Shopping Mall; Birmingham Grand Central; Watford; and Solihull Touchwood.
