Ed’s Easy Diner, the fast-growing American-style casual dining chain, has confirmed it is set to open a new 3,000sq ft restaurant at intu Chapelfield, Norwich, later this month, as well as an Ed’s Outside unit at intu Midsummer Place in Milton Keynes.

The 18-strong operator has taken a 15-year lease on the new restaurant within the existing dining terrace at the Norwich scheme, its first in East Anglia.

The company, which recently opened in Gloucester Quays and Sheffield Meadowhall, is on track to reach 25 sites by the end of the year.

The company has also secured further sites at the O2 Arena; in the Harlequin centre in Watford; Derby Westfield and York’s Designer Outlet.

Intu is in the process of working up plans to further enhance the food and beverage offer at intu Chapelfield. Over the last 12-18 months it has introduced new catering concepts to the centre including Carluccio’s, Gourmet Burger Kitchen, Café Rouge, ASK, Yo! Sushi and Giraffe, creating “a vibrant and varied catering offer at the centre”.

Andrew Guy, chief executive of Ed’s Easy Diner, said: “During 2013 we’re intending to add another seven restaurants to our line-up along with several milkshake stands. Intu Chapelfield sits well within this expansion programme and will allow more people than ever to enjoy our classic diner experience.”
