Rocket Restaurants, the Dublin-based US diner group, has taken over the former Ed’s Easy Diner site in Boucher Road, Belfast, for its third site in Northern Ireland.
The Eddie Rocket’s will launch in February, with an opening also lined up at Lisburn Leisure Park in Q1.
The site in Boucher Road, which is undergoing a £90,000 refurbishment, will be run by an existing franchisee.
The group currently operates 46 restaurants – 25 of which are owned by longstanding multi-unit franchisees
Other upcoming openings include Portlaoise, County Laois; Point Village, Dublin and Celbridge, County Kildare.
Most of these will be franchisee-owned sites in line with the company’s franchise-centric business strategy for 2017
