The expansion of Dishoom, the all-day Indian cafe concept, will not be rapid or large and will depend upon finding the right sites, not necessarily in London, according to its founders.

The company will open its fourth site in London’s Carnaby district this autumn.

Shamil Thakrar told M&C: “There are clearly cities around with plenty of cool people and Indians and they would be suitable. We will stop opening further Dishooms only when there are no more stories to tell. Every restaurant has to be different to the last one, with its own tome specifying every unique fixture, fitting and decoration.”

He said that it could become more challenging to keep the level of attention to detail as the business grows, but is confident the skills across the group’s core senior team are sufficient to achieve this for the company’s current ambitions.

The group’s new Kingly Street site will be 7,000sq ft restaurant and part of Shaftesbury’s Carnaby Court Development. The site will mark the largest in Carnaby and also benefit from having a private courtyard to the rear.

Julia Wilkinson, portfolio and group restaurant strategy executive at Shaftesbury, said: ‘We are delighted to announce that Dishoom will be opening on Kingly Street, Carnaby. There was a lot of interest in this unit but we chose an operator who is well loved yet always creates a unique and memorable dining experience for its customers.”
