CAU, the casual dining steakhouse concept and sister group to Gaucho, has further strengthened its openings pipeline and appointed a new operations director, M&C Report understands.

The 11-strong company, which will open its first site in central London today in St Katharine’s Dock, has appointed Richard Clark formerly of the Essex-based Elysium Group as its new operations director.

At the same time, it has signed up to open a restaurant next year at Hammerson’s Westquay Watermark scheme. It is also in talks on its first site in Scotland.

Clark joins the company after four and half years at Elysium. His appointment comes after Graham Hall was promoted to managing director.

The group will open in Liverpool and Reading over the next two months, with openings in Bath, Birmingham and Harrogate lined up in the second half.

It will join Wahaca, Byron Five Guys and Nando’s at WestQuay Watermark.

Hall told that the group’s recent opening in Wilmslow had been performing exceptionally well M&C Report and underpinned the group’s belief that the brand could work in similar towns going forward.
