Shaun Gray and Steve Novak, the owners of Cattle Grid, the fast-casual steakhouse chain, are set to launch a chicken-led concept called Poulet Rouge in south London, M&C Report has learnt. The first site under new concept, which will focus on “barn-reared chicken, served in the traditional rotisseries style” will feature 40-50 covers and open in March close in Balham tube station. Cattle Grid currently operates five sites, four in London and one in Leeds. It has secured a further site in Wandsworth and is thought to be targeting an opening in Brighton later this year. Novak said: “We’re big fans of steak and ribs, and Cattle Grid proves that’s a popular option, but increasingly we’ve seen a gap in the market for really good, barn-reared chicken, served in the traditional rotisseries style that has proved so popular in France forever. “We want to create a family-friendly environment, serving the best chickens we can source, and delivering them freshly roasted to the plate. This is a restaurant that will serve a family of four a whole chicken and sides for a really great price.” Novak said that a menu at Poulet Rouge would be designed to provide “great, simple food at a realistic price”. He said: “As well as serving chicken – and obviously delicious chips - Poulet Rouge will bring a Gallic flavour to side orders and puddings, with celeriac and salads joining crepes on the menu. With kids being catered for with a wide range of milkshakes, Poulet Rouge will cater for the adult market with an intelligent wine-list veering away from the predictable Malbecs into some more interesting French options, and a range of craft beers will bring a rustic feel to the drinks menu. “As well as a unique dry rub that each chicken will be infused with before cooking, Poulet Rouge will have its own special ‘Poulet Rouge Sauce’ served with each portion of chicken, designed by Shaun to give a gentle ‘kick’ to those looking to spice up their meal.”
