Café Rouge has announced it is to roll out a revamped menu across its estate, following trials of new dishes at its Rouge pilot sites.

The restaurant chain, operated by The Big Table Group, said the new menu roll out was a natural next step for the brand as it continues to trial new design concepts and menu options in response to changing consumer tastes.

The business has so far been trialling the menu at its two Rouge concept sites in Haywards Heath, West Sussex and the Bullring in Birmingham.

Alongside a new brand design and colour palette, the new menu will feature dishes such as black truffle and camembert burger, a bouillabaisse, with fresh mussels, prawns, red mullet, and seabass. There will also be additional vegan options such as cauliflower streak and jackfruit tagine.

The new dishes will join Café Rouge’s existing French-inspired food such as mussels and steak with frites.

Steve Worrall, chief operating officer at Rouge, commented: “In recent months we’ve been working hard to make Café Rouge an even better experience for our guests.

“We’ve launched Rouge in Haywards Heath and in the Bull Ring Birmingham, improving the social ambiance and creating a more modern, and relaxing dining experience, and guests have loved what we have done.”

“We’re now taking that learning and are now sharing some of the great new tastes and flavours across all the Café Rouge restaurants.”

Alongside new dishes, the brand has also enhanced our wine list, and is now suggesting matching wines for its dishes.
