Byron Burger will open at 9am and trial a variety of breakfast/brunch options when it opens its refurbished its High Street Kensington Store, CEO Simon Wilkinson has told MCA.

As part of a wide-ranging interview, the Byron CEO, who started in the role three months ago, said as well as improving the quality of its coffee, the burger restaurant would introduce four breakfast/brunch style dishes, including an “indulgent” English breakfast dish, an American-influenced plate, like pancakes or waffles, plus a vegetarian/vegan dish and a simple cake or pastry option.

The redesigned restaurant will also feature sofas and armchairs, as well as communal tables to encourage a coffee shop style atmosphere where people could “plug in a laptop and do some work with some really good quality coffee and maybe some brunch as well.”
