The company behind an Aberdeen restaurant that specialises in burgers, craft beers and cocktails is to replicate the concept in Edinburgh.

The Boozy Cow, owned by Speratus Group, is said to offer a menu of ‘dirty’ burgers and sides in a setting that fuses urban art and graffiti with stripped down dining.

The new site, on Frederick Street, will open on 19 March. With a 60% female customer demographic, Speratus claimed the Aberdeen restaurant has “exceeded all expectations” following its opening last August.

The Edinburgh site will be open until 1am seven days a week, with DJs on Tuesday, Friday and Saturday nights.

Where possible, the burger restaurant intends to source ingredients locally and work with local suppliers. In keeping with the dirty food ethos, there will be no plates or cutlery.

Priced around the £7-8 mark, menu items will include burgers with cheese, maple bacon and chilli toppings.

There will also be hot dogs, chicken burgers, cheesesteaks, a Manchego mushroom melter, and a mac ‘n’ cheese burger, complemented by fries, slaws and salads.

Customers can also indulge in a chilli challenge, where they are given 15 minutes to eat one chilli cheese burger, one chilli dog, one portion of chilli cheese fries and one Oreo milkshake. If they succeed, they are given the meal for free.

Featured on the cocktail menu is a Boozy Cow Iced Tea, containing Absolut vodka, Beefeater gin, light rum, Tequila and triple sec, with coke, ice and lime.

The Dark & Boozy, meanwhile, comes with dark rum, ginger beer, Angostura bitters, lime and ice; while the Nutty Cow contains Absolut vodka, Frangelico and milk.

Available in cans only, beers and ciders will include Red Stripe, Estrella Damm and Rekorderlig. A selection of spirits and wines will also be on offer.

Martin Brown, Speratus managing director and the man behind the Boozy Cow concept, said: “We are really excited about the arrival of the Boozy Cow in Edinburgh – we have a great concept and can’t wait for Edinburgers to get a taste of it.”

Established in 2009, Speratus Group operates six other bar/restaurants in Edinburgh and Aberdeen.
