Barburrito, the Business Growth Fund (BGF)-backed chain, has added to its regional pipeline with the addition of sites in Edinburgh and Derby.

The openings will take Barburrito to 21 sites nationally, with a total of six in Scotland. It has a short-term target of operating 25 sites by the end of 2017.

It has exchanged contracts on a property on Forrest Road in Edinburgh close to the university. Work is expected to start on site in the summer, with plans to open in early autumn. Meanwhile, it has also exchanged on a site at intu Derby, targeted for a mid-2017 opening.

Last week the Morgan Davies-led business opened its 13th site, a site in Hammersmith Broadway shopping centre. It will open at intu Metrocentre Gateshead at the end of March.

Last October, the company acquired the Pinto Mexican Kitchen business in Scotland, which comprised five sites spread across Edinburgh and Glasgow. It aims to rebrand those to its new design before the summer.
