Aubaine, the French restaurant and patisserie concept, is set to become the next operator to link up with Hilton Hotels to open a restaurant in one of its London sites, M&C Report has learnt.

The nine-strong group, which is led by Hani Nakkash, will open a new 5,000sq ft site at Hyde Park Hilton, with 100 covers, this summer.

This week, Jamie’s Italian will open its latest London flagship site at the Hilton at More London, while Burger & Lobster is believed to be in talks to open in the planned extension of the Hilton near Liverpool One.

Shelley Sandzer acted on behalf of Hilton Hotels in securing both Aubaine and Jamie’s Italian.

Aubaine will be the sole restaurant to occupy the ground floor within Hyde Park Hilton located at 129 Bayswater Road.

Last year, Aubaine said it had identified a number of target towns and cities in southern England as it looks to open its first site outside London.
